Healthy Ferrero Rocher Bites + Freeze cookies!

Take a good look at these charming little bite-sized cookies that taste heavenly! Full of wholesome ingredients and sugar-free.

Ferrero Rocher is possibly the sexiest and most luxurious chocolate in the whole world! With that glossy golden colour… but don’t fool yourself. From milk, emulsifiers, cocoa butter, cocoa mass, palm fat, etc …. only 28.5% are hazelnuts! Can you believe it? It’s suppose to be a hazelnut chocolate, so why is the percentage of hazelnuts so low? It makes me mad! Each ferrero rocher has about 68.7 calories but that’s not even what really matters. The fact that it is a completely empty food is what makes it bad and not good for you. So zero fiber, energy, nutrients or protein.


It’s mind blowing, exactly like nutella which mostly contains sugar and 70% of saturated fat! My friends love hazelnuts just like me and for the past months I’ve been trying to recreate those goodies and make them a lot healthier! If you’ve read until here, hopefully you are ready to throw the ferrero rochers and nutella out of the window, but no harm comes to the world if you have a ferrero rocher every now and then. Sometimes, you should allow yourself to indulge but why not enjoying a healthier version of your favourite?


My ferrero rocher bites are packed with flavour, fiber and so chocolatey! You can find the recipe at the end of the post and for the nutella lovers out there, I’ve got this nutella recipe which goes awesomely with oatmeal or on a toast! My nutella is also one of the main ingredients of the ferrero rocher bites I am posting today.


Well, sometimes a cookie girl just needs her cookies! We are all cookie girls or cookie monsters, right? And, it’s so easy to pop one out of your freezer and enjoy it in a few minutes. Today I’ll just show you the 4 easiest steps to freeze your baked cookies perfectly !


What you’ll need:


⇒ Rigid, airtight container or zipped-top bags

⇒ a pen

⇒ tags


1- You can only freeze baked cookies if they are completely cooled. For the ferrero rocher bites, it’s better to freeze them after baked.


2- Place the biscuits or cookies into a rigid, airtight container (like the first picture below ⇓) or into zipped-top bags (second picture ⇓) . Up to you!



3- Now it’s time to label and date containers and tins! Let’s do it… date!


4- Finally, eating cookies! They can be placed in the oven for 5 minutes, until warm and crisp, or to thaw leave the container out of the freezer for 20-30 min before serving.

Store them in an airtight jar, up to one week. I love my cookie jar!

Important Notes:

  • Cookies usually can be frozen up to 3-4 months.

  • Remove as much air as possible from the container.

  • Be sure you are using freezer bags and not just large storage bags!

  • You can use waxed paper between cookies to separate them.

  • When freezing cookie dough, shape cookies into individual portions and place them on the fridge for 20 min. Then follow the same steps as baked cookies, but don’t forget to use waxed paper. You should only freeze cookie dough that is easily scooped, like cut out cookies. Try my Christmas Cookies!

Healthy Ferrero Rocher Bites

Yields 18

Prep Time: 10 min

Cook Time: 15 min

INGREDIENTS:

Dry Ingredients

  • 3 cups of quick oats

  • 4 tablespoons of chia seeds

  • 1/2 cup of wheat bran

  • 1/2 cup of chocolate chips and some extra 2 spoonfuls

  • 1/2 cup of chopped hazelnuts

Wet Ingredients

3 tablespoons of my nutella (http://sweet-spotting.com/healthy-nutella-sugar-free/)

4 tablespoons of olive oil or coconut oil

3 tablespoons of molasses/maple syrup or honey

200 ml of dairy-free milk

INSTRUCTIONS:

- Preheat the oven to 180ºC (350F) and line a cookie sheet.

- In the microwave, melt the chocolate until smooth. Pour the nutella over the dry ingredients with the melted chocolate and mix until it is crumbly. Add the honey, olive oil and the milk and mix again. If you want add and mix in more chocolate chips and the chopped hazelnuts! Use a teaspoon to make small scoops of the mixture, space them well apart on the baking tray.

- Bake for 15 minutes or until lightly browned and bites are set.
