Bring on the HOBNOBS!
Have you ever met someone that doesn’t like Hobnobs? Well, I haven’t and if someone says they don’t like them…I bet they’re lying!
My Hobnobs are a blend of coconut, oats, wheat flour and brown sugar wrapped in ribbons of chocolate!

It’s impressive how cooking and baking with natural ingredients changes everything. If you try to change some cooking habits like using butter or loads of sugar all the time, you can still create delicious recipes, laden with benefits and flavour. These ones are low in sugar and they have a good amount of fiber.
So, you’re having a treat that makes you feel good! I love them… and you, what’s your favourite cookie?

The dough is very wet and sticky, so you’ll have to be patient to shape them the way you like (rolling them and pressing the middle). One thing I can definitely promise: they’re sooooo worth it!

Lemons give a sour vibe, which peers perfectly with dark chocolate!

Hobnobs recipe
Yields 20
Cook Time: 20
INGREDIENTS:
1 cup of rolled oats
3/4 cup of whole wheat flour
1 cup of shredded coconut
1 teaspoon of coconut butter (or any nut butter ex: peanut butter...)
1/4 cup+ 2 tablesp. of brown sugar or dark brown sugar
6 tablespoons of olive oil
1/3 of milk
2 tablespoons of water + 1/2 teaspoon of baking soda
chocolate chips ( about 1/2 cup of dark chocolate >80%)
INSTRUCTIONS:
Preheat oven to 180º and line a baking sheet with parchment paper.
Combine the first three ingredients in a bowl.
Whisk the remaining ingredients in a separate bowl and add to the dry mixture.
Mix until well combined with a wooden spoon or a rubber spatula.
Roll the dough into balls (of about 2-3 cm) and flat them, using a round cookie cutter may help.
Bake them for 10-12 min until crispy.
Remove from the oven, leave to cool on the tray and transfer to a wire rack.
Melt the chocolate on bain-marie or on the microwave (2-3 min) and simply drown the edges of the cookies.
Leave to set in the fridge for 15-16 min before eating!
Notes: Store in an airtight container on the fridge for 4-5 days.
