Today, I’m honoured to post the incredible classic cookies, overloaded with chocolate chips… now with a much more healthy nutrient-dense version! It’s a happy day! Not all hope is lost, you can count on it!

These are definitely hard to leave alone! Ohhh … here comes the cookie dough!
It’s Sunda-yyy! Do you need more reasons to bake cookies? Of course not! In case, you’re still doubting about trying these buddies up here, I’ll give you 3 reasons to make up your mind:

In case you didn’t know – I love chocolate chip cookies, due to the fact that I adore chocolate! They are one of the best ways to satisfy a growling midnight tummy. I can’t forget to say that this recipe is dedicated to my daddy, who loves midnight snacks (about one a.m., his bedtime!). And to all vampires out there that just like my dad can’t resist a late night snack but want to stay healthy. Me? I’m definitely a morning person. I love eating one or two cookies for breakfast!


I’ll also share with you some late night snack options fit for everyone:
Blueberries and raspberries;
Greek yogurt with homemade granola or clusters;
A handful of nuts;
2-3 Seed Crackers;
Or my Carrot Coconut Raw Truffles;
Banana with peanut butter or hazelnut spread;
My cookies are made with a low amount of brown sugar (about 1/2 cup for 18 cookies). Well, a lot of people ask me “Is it brown sugar healthier?” or “Why should I avoid using refined sugar”? Here’s the answer.
R: First, natural sugars present in foods such as fruit, vegetable and whole grains are always the healthier choice. When consuming a piece of fruit, for example, your body gets the sugar, energy but also fiber, minerals and vitamins. Processed foods are loaded with refined sugars and empty calories with zero-nutrients or benefits.When sugar is refined they strip the sugar cane plant or beet plant and all its natural components, except the sucrose. Then sucrose is concentrated into what we know as table sugar. When sucrose is isolated, sugar acts like a drug in your body. Too much refined sugar creates a cycle of intense highs and lows, keeping our blood sugar, hormones and neurotransmitters out of balance. When your body is feeling sick, you’re more likely to gain weight and be unhealthy. The problem around sugar is not eating a cookie or a piece of cake here and there, it’s the fact that everything has sugar, even yogurt and bread. So, I always try to replace processed food with homemade recipes. I make my own sugar free granola, my muffins and try to reduce the amount of added sugar in baked goods, desserts or cookie recipes like this one!

Midnight Approved Chocolate Chip

Cook Time: 15
INGREDIENTS:
2 cup quinoa flour
1/2 cup of brown sugar
½ tsp baking powder
2 eggs
1/3 cup of coconut oil
1/3 of milk
chocolate chips
INSTRUCTIONS:
Preheat the oven to 180º(350F) and line a cookie sheet.
Mix the dry ingredients in a large bowl.
Add the wet ingredients, combine everything and shape them as you like! When they are on the cookie sheet bake them for 15 min or until golden brown!
Notes: You can use a dairy free milk, like almond milk or coconut milk. You can use maple syrup instead of brown sugar, but the consistency will change
