MERRY Christmas!
These paleo cookies are free from sugar, eggs and grains. Yet, they’re delicious and really perfect for the holidays. Definitely approved by Santa!



Christmas cookies? Where? Everywhere with a smart kitchen and a wise baker! Christmas isn’t complete without a generous batch of cookies. Even though I love baking cookies all year long, making them in December feels extra special and comforting. A cookie spell is cast on me this time of the year! I don’t one if it’s the cold weather, the fireplace, just me craving sweets or the thought of Christmas itself. It’s great that I’m not alone on this. My family loves them too and sticks with me through all the baking (even baking slippery slopes)! Well, “baking cookies” is a tradition on my house. But cookies are not our only custom, we all love decorating the house, choosing the tunes for the holiday and the dinner table! What about you? What’s your favourite Christmas activity?



Since I was a little girl, I’ve loved rolling the dough and all over the house as I take care of my business (I hope my mom doesn’t read this!). Well, ginger cookies have always had a special place on my heart and my mother is crazy about barks. So, for her the Fennel Cookie Bark can’t be missing …
When I first tried these cookies, I was quite surprised. They were chewy, crunchy with a cool side of almond and ginger. Oh and I can’t get enough of cranberries! They’re chewier after baking and it feels like little juicy explosions are going off in your mouth … If you don’t like them, don’t stress! Cranberries can be easily replaced by dates or raisins. Trust the process and soon you’ll be surrounded by delicious CHRISTMAS COOKIES!


I think it’s time to chat a little about what makes these cookies so awesome:
- No time? Not in the mood for cooking but want something delicious? It’s simply a matter of blending all the ingredients in a food processor or blender. Then, bake the cookies and wait for those soft centers and lovely golden brown edges to appear!
- It’s a hell of a cookie! They’re high on protein, fiber and low in sugar and fat. You can stay away from butter this time. Maple syrup and cranberries or dates is all you need to make this cookie a sweet heaven.

- You can flavour with different spices or extracts, like cinnamon or cardamom. In my house, ginger rules … soo good!
- Show off the healthy nut in you! No grains are needed. Instead you’ll need peeled almonds and sesame seeds to achieve a delicious texture. Check my healthy pantry and find more about almonds. Coconut flour has to be on your baking list too!


Christmas Cookies (paleo recipe)
Prep Time: 13 min
Cook Time: 15 min
INGREDIENTS:
Cookies
1 cup of peeled almonds
3/4 cup of sesame seeds
1/3 + 3 tablespoons of coconut flour
172 cup of dates or dried cranberries
4 tablespoons of maple syrup
1/2 teaspoon of cinnamon and ginger
1/2 of chopped spinach
INSTRUCTIONS:
Preheat oven to 180ºC(350F) and line a cookie sheet.
Blend all the ingredients.
On a floured surface, divide the dough in two. Add the blended spinach to a part and start cutting using your favorite shaped Christmas cutters. Place them about 2 inches apart on the cookie sheet.
Bake 15 min in a preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely and bite!
