Nut-free, gluten-free paleo macaroons….BOO’YAL!

“Trick or treat. Be so sweet.

Give me something good to eat”.

Are you on the lookout for an easy low-carb snack for this Halloween season? Then, it’s time to give these macaroons a whirl.

They’re not only boo-tiful but also delicious and healthy!

A FRENCH COCONUT ARMY NEVER FELT SO GOOOD … QUITE BIZARRE TOO!

Honestly, horror films frighten me like crazy! I know that’s exactly the point, but I really have to close my eyes on the scary parts. Horror films are supposed to be gory and funny…but damn I wish I could watch one without passing out or feeling shivers down my spine days after just by thinking about it. To make it simpler, I hate scary films and we are just not meant to be! Guess what? My whole family loves watching these awesome terrific films…so my salvation is hiding in the kitchen surrounded by my safe pots and pans! Here and there, I eventually have to make an appearance in the living room. But. then, I come bearing gifts like these lovely macaroons and all’s well in the world, right? I bet so. At least for me, YES!


I’m sure these macaroons don’t need introductions, as you already know they take lots of shredded coconut. The thing you actually are about to discover is that these ghosts right here are made with mandarin juice and coconut milk. They’re white all over because they just fancy whites! Out with the yolks this time! They’re sweetened with vanilla extract and honey too. So easy to pull together! They’re great for baking with children because they’re fun to shape and quite messy! You can even put some melted chocolate on top.



Healthy Ghost Mandarin Macaroons

Yields 22

Prep Time: 10 min

Cook Time: 25 min

INGREDIENTS:


2 cups + 1/2 of shredded coconut

1/3 can of coconut milk

2 egg whites

1 teaspoon of vanilla extract

3 tablespoons of maple syrup

6 tablespoons of mandarin orange juice (see notes)

mandarin orange zest

extra: 1 teaspoon of brown sugar or honey

INSTRUCTIONS:

  1. Preheat your oven to 350°F (180oC) and line a large non-stick cookie sheet.

  2. Whip the egg whites and vanilla extract on a medium bowl, until soft peaks. Add the coconut milk and combine everything.

  3. Finally, it's time to stir in the shredded coconut and the orange juice/zest.

  4. Shape the macaroons in a "ghost kinda way" and bake them for 25 min or until golden brown. Let them cool on the oven for a crispier texture....Next, knock yourself out dressing the little ghosts to perfection.

Notes: You'll need the juice of one mandarin orange. Add some zest too for more flavour.Toasting the shredded coconut can be a good alternative for a deeper taste but it takes a bit more time. It's worth your time, though!
